Our ground beef, pork, lamb and chicken all come from "trim" which is
produced when cutting steaks, roasts or other retail cuts and is ground daily.
Once packaged, our ground beef is given a 24 hour shelf life.
Wholesome, nutritious, and fresh - it's the difference you can taste.
Less expensive alternatives are abundant.
Ground beef from "tube meat" a product used by many large operators
is trim from a processing plant. Much like the hot dog concept - this meat could
come from almost any part of the cattle. It's likely several weeks old
before the retailer takes it from its coarsely ground
format to what the consumer knows as ground beef. Ground beef from
processing plants is the most frequent source of E coli bacteria.
Other retailers now process meat for retail packaging in a central plant.
It's from there that the retail package is transported and distributed to retail stores.
These packages are often "gas flushed" which means an inert gas is used
to displace the air in the package and in turn, slow spoilage.
This packaging system is generally safe but hardly fresh.
Another option a retailer may employ is to grind lower grade meat with the thought
that once it's ground no one will taste the difference.
